Healthy Meals for Healthy Moms
I try to keep dinner early and light, since our digestive fire (agni) is weak at the end of the day.
This means that a heavy dinner just makes us heavy; a light dinner will help make us lighter.
Soups are great in the winter. I love this one – it is super easy, and satisfying.
Butternut Squash Soup with Sweet Potato
In a large pot, sauté chopped garlic (5-6 cloves).
Add sliced yellow onions – sauté til soft in olive oil.
Cut large pieces of butternut squash (a Trader Joe’s package saves lots of time), carrot, parsnips, and sweet potato.
Add thyme, pepper, and any other seasonings you like.
Add veggie broth. Add more or less, depending how thin or thick you want it (to cut the salt, do half water/half broth).
Boil and then simmer for 30-60 min.
Pour in blender or food processor, blend, and eat.
Note: leftovers don’t really work for giving you prana, or natural nourishing energy. Try to get in the habit of making just enough!
